Sugar-free gelatin (any flavor)

Boiling water

Cold water or diet soda

Fresh fruits (optional)
Avoid fresh pineapple and papaya

Instructions
Bring 2 cups of water to a boil in a kettle or saucepan.
Pour sugar-free gelatin packets into a large mixing bowl.
Carefully pour boiling water over gelatin and stir constantly for 2-3 minutes until completely dissolved.
Add 2 cups of cold water or diet soda and stir well to combine.
Add fresh fruit if desired while mixture is still slightly warm.
Pour into individual serving cups or a large baking dish.
Cover and refrigerate for at least 4 hours until completely set and firm.
Serve and top with sugar-free whipped cream if desired. Store in refrigerator for up to 5 days.
Notes
Refrigeration time of 4 hours is required for proper setting. Can be prepared up to 5 days in advance.
