Strawberry Acai Refresher with Coconut Milk

Ingredients
  

  • 1 pack (100g) Acai berry smoothie pack (frozen)
  • 1 cup Fresh strawberries (frozen or fresh)
  • 0.25 cup Coconut milk (full-fat, canned)
  • 1 cup Apple juice or white cranberry juice
  • 1 cup Ice cubes
  • 1 to 2 tablespoons Honey or agave syrup (optional)
  • A few sprigs Fresh mint leaves (for garnish)

Instructions
 

  • Add the frozen acai smoothie pack, strawberries, and apple juice to your blender.
  • Pulse until the mixture reaches a smooth, creamy consistency with no chunks remaining.
  • If you prefer extra sweetness, add honey or agave syrup and blend again for 10 seconds.
  • Fill two tall glasses with ice cubes, dividing them equally.
  • Carefully pour the blended strawberry acai mixture over the ice, filling each glass about three-quarters full.
  • Slowly pour the coconut milk over the back of a spoon held just above the surface of the drink to create the signature layered effect.
  • Use a long spoon to gently swirl the coconut milk into the pink acai base, or leave it layered for a prettier presentation.
  • Top with fresh mint leaves, a strawberry slice, or coconut flakes. Serve immediately with a wide straw.

Notes

Use full-fat canned coconut milk for best layering effect. Freeze glasses beforehand for an extra chilled drink. Serve immediately with a wide boba straw.
