Mediterranean Spinach and Feta Cheese Crisps

Ingredients
  

  • 2 cups Fresh spinach, finely chopped Squeeze out excess moisture before using
  • 1 cup Crumbled feta cheese Authentic Greek feta preferred
  • 8 sheets Phyllo dough sheets Keep covered with damp towel while working
  • ½ cup Olive oil, extra virgin For brushing phyllo
  • ¼ cup Diced red onion Finely diced
  • 2 cloves Minced garlic Fresh minced
  • 1 tablespoon Dried oregano Mediterranean seasoning
  • 1 teaspoon Dried thyme Aromatic herb
  • 1 teaspoon Fresh lemon zest Brightens flavors
  • ½ teaspoon Sea salt
  • ¼ teaspoon Black pepper
  • 2 tablespoons Sesame seeds Optional topping

Instructions
 

  • Place chopped fresh spinach in a clean kitchen towel and squeeze out excess moisture thoroughly. Dry spinach prevents soggy crisps.
  • In a large mixing bowl, combine dried spinach, crumbled feta cheese, diced red onion, minced garlic, oregano, thyme, lemon zest, salt, and black pepper. Mix until evenly combined.
  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • Lay out a phyllo sheet on a clean surface. Keep remaining sheets covered with a damp towel to prevent drying.
  • Lightly brush the phyllo sheet with olive oil using a pastry brush, ensuring even coverage.
  • Spread 2–3 tablespoons of spinach and feta filling evenly across the sheet, leaving a 1-inch border on all sides.
  • Carefully roll the sheet tightly into a log, then coil into a spiral shape. Place on prepared baking sheet.
  • Repeat steps 4–7 with remaining phyllo sheets and filling.
  • Brush the tops of all crisps with remaining olive oil and sprinkle with sesame seeds if desired.
  • Bake for 18–22 minutes until golden brown and crispy, rotating the baking sheet halfway through.
  • Remove from oven and cool on baking sheet for 5 minutes. Transfer to serving platter. Serve warm or at room temperature with tzatziki sauce or hummus.

Notes

Crisps can be assembled and frozen up to 3 months in advance. Bake from frozen, adding 5 minutes to baking time. Store leftover crisps in an airtight container at room temperature for up to 3 days.
