Lazy Dog Chicken Lettuce Wraps

Ingredients
  

  • 1.5 lbs Ground chicken
  • 12 count Butter lettuce or iceberg lettuce leaves
  • 1 cup Water chestnuts, diced
  • 4 stalks Green onions, chopped
  • 2 tbsp Fresh ginger, minced
  • 3 cloves Garlic, minced
  • 3 tbsp Hoisin sauce
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 2 tbsp Vegetable oil for cooking
  • To taste count Salt and black pepper
  • 2 tbsp Fresh cilantro, optional

Instructions
 

  • In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, and sesame oil. Set aside.
  • Place a large skillet over medium-high heat and add 2 tablespoons of vegetable oil. Allow it to heat for about 1 minute until it shimmers slightly.
  • Add ground chicken to the hot pan, breaking it up with a wooden spoon as it cooks. Cook for 5-7 minutes until the chicken is golden and cooked through. Drain excess fat if needed.
  • Add minced garlic and ginger to the cooked chicken, stirring constantly for about 1 minute until fragrant. Don't let the garlic burn.
  • Stir in the diced water chestnuts and cook for 2 minutes. The water chestnuts should remain slightly crisp.
  • Pour the prepared sauce over the chicken mixture and stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly and coats all ingredients.
  • Remove from heat and fold in the chopped green onions and fresh cilantro. Taste and adjust seasonings with salt and pepper as needed.
  • Gently rinse the lettuce leaves and pat them dry. Lay them out on a serving platter to serve as edible wraps.
  • Spoon the warm chicken mixture into individual lettuce cups and serve immediately while warm. Guests can customize each wrap to their preference.

Notes

These wraps are naturally gluten-free when using tamari sauce. Serve warm filling in cold, crisp lettuce cups for best texture contrast. Make-ahead friendly—prepare filling and store separately, assemble fresh before serving.
