Ingredients
  

  • ½ cup apricot preserves
  • 2 tablespoons rice vinegar
  • 1 teaspoon soy sauce optional
  • ¼ teaspoon ginger ground or freshly grated
  • ½ clove garlic minced or grated
  • 1 –2 teaspoons sugar adjust to taste
  • 2 –3 tablespoons water
  • Red chili flakes optional, a pinch

Instructions
 

  • In a small saucepan, combine apricot preserves, rice vinegar, soy sauce, ginger, garlic, and sugar. Stir until well mixed.
    Add 2–3 tablespoons of water to thin the sauce and stir until smooth.
    Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently.
    Simmer for 5–7 minutes until slightly thickened.
    For a smooth, restaurant-style texture, blend the sauce using an immersion blender or standard blender.
    Taste and adjust sweetness or tanginess by adding sugar or rice vinegar as needed.
    Remove from heat and serve warm or at room temperature with spring rolls, dumplings, or roasted meats.
