¼cupWater (cold)
¾cupFruit juice or broth (warm)Pomegranate, tart cherry, or bone broth work well
1-2tablespoonsRaw honey or maple syrupOptional for sweetness
½teaspoonLemon juice or vanilla extract
PinchSea saltTo taste
Instructions
Pour cold water into a small bowl and sprinkle gelatin powder evenly over the surface. Allow to bloom for 2-3 minutes until the gelatin absorbs the water.
Heat your chosen juice or broth to 160-180°F (70-80°C). Avoid boiling to preserve amino acids and collagen structure.
Slowly pour the warm liquid into the bloomed gelatin while stirring gently for 1-2 minutes until completely dissolved with no lumps remaining.
Add honey or maple syrup for sweetness, lemon juice or vanilla extract for flavor, and a pinch of sea salt. Stir well to combine.
Pour the gelatin mixture into serving glasses, a baking dish, or silicone molds. Cover loosely and refrigerate for at least 4 hours, preferably overnight.
Remove from refrigerator 10 minutes before serving. Eat with a spoon, cut into cubes, or blend into smoothies. Store in an airtight container for up to 7 days.
Notes
This recipe requires refrigeration time of at least 4 hours (overnight preferred) for proper gelatin setting. Best consumed within 5-7 days when stored in an airtight container.
