Instructions
Pour the sugar-free gelatin powder into a heat-safe bowl. Slowly add 1 cup of boiling water while stirring constantly. Keep stirring for 2–3 minutes until the gelatin is completely dissolved with no visible particles remaining.
Once the gelatin mixture is fully dissolved and smooth, add 1 cup of cold water. Stir well to combine. If desired, add a squeeze of fresh lemon juice for enhanced flavor complexity.
Choose your setting method: pour the mixture directly into individual serving cups for quick-set parfaits, or transfer to a shallow baking dish for a traditional layered dessert that you'll cut into squares.
Place your gelatin in the refrigerator for 3–4 hours, or until it reaches your preferred firmness. For a softer, mousse-like texture, reduce time to 2 hours. For a completely set gelatin, allow 6 hours or overnight.
Once set, top with sugar-free whipped topping and fresh berries. This adds texture, visual appeal, and minimal additional calories.
Remove from refrigerator and serve immediately. Store leftovers in an airtight container for up to 5 days.
