Ingredients
  

  • 3 medium ripe bananas about 1 ½ cups mashed
  • 2 cups all-purpose flour or substitute ½ with whole wheat flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon optional
  • ¼ tsp ground nutmeg
  • 2 large eggs room temperature
  • ½ cup unsalted butter melted (or vegetable oil)
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts toasted
  • Optional: cream cheese frosting or glaze for topping

Instructions
 

  • Preheat and Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
    Mash Bananas: In a medium bowl, mash ripe bananas. Leave some small chunks if desired.
    Mix Wet Ingredients: In a large bowl, whisk together eggs, melted butter, vanilla, granulated sugar, and brown sugar. Stir in mashed bananas.
    Combine Dry Ingredients: In another bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gently fold into wet mixture.
    Add Walnuts: Fold in chopped walnuts, reserving a few for topping if desired.
    Bake: Pour batter into prepared pan and smooth the top. Bake 50–60 minutes, or until a toothpick comes out clean. Check at 50 minutes.
    Cool and Serve: Let cake cool 10–15 minutes in pan before transferring to a wire rack. Serve plain, or top with cream cheese frosting or glaze.
