Instructions
Preheat and Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.Mash Bananas: In a medium bowl, mash ripe bananas. Leave some small chunks if desired.Mix Wet Ingredients: In a large bowl, whisk together eggs, melted butter, vanilla, granulated sugar, and brown sugar. Stir in mashed bananas.Combine Dry Ingredients: In another bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gently fold into wet mixture.Add Walnuts: Fold in chopped walnuts, reserving a few for topping if desired.Bake: Pour batter into prepared pan and smooth the top. Bake 50–60 minutes, or until a toothpick comes out clean. Check at 50 minutes.Cool and Serve: Let cake cool 10–15 minutes in pan before transferring to a wire rack. Serve plain, or top with cream cheese frosting or glaze.
