Baked Apple Cinnamon Cottage Cheese Breakfast Bowls

Ingredients
  

  • 2 cups Cottage cheese Use smooth variety for creamiest texture
  • 3 medium Apples, cored and diced Mix of Granny Smith and Gala works well
  • 2 teaspoons Ground cinnamon
  • 3 tablespoons Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Granola Use your favorite variety
  • 0.5 cup Chopped walnuts or pecans
  • 0.25 teaspoon Nutmeg
  • 1 pinch Sea salt
  • 0.5 cup Fresh blueberries Optional, for topping

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease four individual baking dishes or ramekins with butter or cooking spray.
  • In a large mixing bowl, combine the cottage cheese, vanilla extract, and 1 tablespoon of honey. Stir until smooth and well combined.
  • In a separate bowl, toss the diced apples with cinnamon, nutmeg, sea salt, and the remaining 2 tablespoons of honey. Mix gently to coat evenly.
  • Divide the cottage cheese mixture equally among the prepared baking dishes, creating an even layer at the bottom of each.
  • Top each cottage cheese layer with the spiced apple mixture, distributing evenly across the surface.
  • Sprinkle the chopped walnuts or pecans over the apple layer, then top each bowl with granola.
  • Cover the baking dishes with aluminum foil and bake for 15 minutes. Remove foil and bake for an additional 8-10 minutes until apples are tender and granola is lightly toasted.
  • Remove from the oven and let cool for 2-3 minutes. Top with fresh blueberries if desired and drizzle with additional honey.
  • Serve warm and enjoy immediately, or allow to cool completely for refrigerated storage throughout the week.

Notes

These bowls can be prepared ahead and stored in the refrigerator for up to 2 days before baking. For best results, use smooth cottage cheese and mix gently to combine all ingredients.
